How to cook a simple Ginataang Manok
Ginataang manok is an easy to cook dish, it is full of flavor. It is perfect for those who likes creamy food. Ginataang manok is typically eaten with rice. The most important ingredient is the 'gata' or coconut milk. It provides the creaminess on the chicken and soup.
The way our family cook dishes depends on our preference and depending on the ingredients available. In this case, our ginataang manok doesn't have vegetables because most of the people in the house doesn't like vegetables. Additionally, we prefer hot food. Personally speaking, I don't think you always have to follow the typical ingredients that you found on the internet. Cooking is and art; you should be able to feel free to be creative while doing it.
The ingredients of our ginataang manok are:
- 3 tablespoons cooking oil
- 4 cloves garlic
- 1 large onion
- 1 kg chicken, cut into pieces
- 1 cup coconut milk (gata)
- 1 cup coconut cream (kakang gata)
- 1 cup water
- 2 pieces finger chilies (siling pangsigang)
- 2 pieces siling labuyo
- 1 tablespoon fish sauce (patis)
- salt
- coarse pepper
- 1 piece Magic Sarap
How to cook:
- In a pot add oil then garlic, wait till it turns golden brown, then add onion and ginger.
- Add the chicken and brown on all sides.
- Add the chicken stock and 1 cup of coconut milk then bring it to a boil. Simmer in low heat for 25 minutes.
- Add salt, pepper, and Magic Sarap depending on you taste preference.
- Add the remaining cup of coconut milk, long green chili then simmer for 10 more minutes.
